Marinara Sauce

3 cups diced onions
2 cups diced green bell pepper: cored
⅔ cup olive oil
2 cloves garlic, minced
12 cups tomato chopped or pureed
2 tsp. salt
1 tsp. rosemary
1 tsp. thyme
1 tsp. basil
1 tsp. oregano
2 tsp. sugar
1. Sautee onions and pepper until tender
2. add garlic, saute 3 minutes
3. add everything else
4. simmer uncovered for 3 hours or until thick
Can be processed if you have a pressure cooker (which I don’t) or frozen for future use.
