Chocolate Cinnamon Cake

½ cup butter, softened
2 cups white sugar
¼ cup unsweetened cocoa powder
½ cup sour milk
2 eggs
1 teaspoon vanilla extract
½ cup vegetable oil
½ cup water
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 teaspoon baking soda

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan or two 8×8 inch pans

2. In a large bowl: Cream together room temperature butter, sugar, and cocoa. This always takes longer than I expect.

3. add milk, eggs and vanilla

4. Add cinnamon, water and oil.

5. Sift in the flour, and baking soda, mix until just smooth.

6. Spread evenly into the prepared pan. Bake in the preheated oven for 35 – 45 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool.

    1/2 cup butter and 2 cups white sugar? Is that right? It just sounds like a lot of sugar!

    Yes, sadly it is correct. But the carb count is still better than most not artificial sweetener cake. I want to try it again with 1 cup sugar, 1 cup apple sauce and skipping the oil/water. It turned out like double batch brownies and I want to find a way to make it CAKE.
