Knives

I’m not cooking right now. I’m hanging out, blowing my nose, feeling sorry for myself and internet searching for a random combination of bike parts for the Nishiki and kitchen gear. I’m weird that way.

Mostly I am waiting for the Lee Valley Christmas catalog to come out.

I want to upgrade my main chopping knife. I have small hands. my ring size is only a 4 (which makes my fingers the only part of my body that is the same as Marilyn Monroe’s) and most (all) chef’s knives that I have found seem too big and unbalanced for me. So the knife that I use the most is a megamart special that has a 6.5 inch long blade and is made out of not good steel. It doesn’t hold an edge very long. I would really like a good chef’s knife that came in a smaller size. (If you are reading this T, that is not a hint, you can’t pick one out for me).

The problem is, I don’t know enough about knives to order one without holding it first. That kind of limits my options. I really need to feel the balance before I know if it will work at all for me. Which is too bad because there are lots of nice sounding kitchen knives on the internet. The local selection isn’t that good.

For example, the one in the picture – the blade length sounds good, but that isn’t how I hold my knife. I choke up much closer to the cutting surface than that. More like this:

I’m not sure if that will work with that handle.
