Fan challenge

OK.  I am being challenged by this broken wrist and I am in turn passing this challenge on to you.  All 67 of you who read this daily.  If I am going to be cooking for my family for the next two months with one hand tied behind my back, I am going to need help finding really simple recipes.  Here’s where you come in.  Send your favorite old stand by super easy recipes to clxtgirl at gmail and I will try them out and post pictures.

I’m afraid I don’t have prices.  The winner gets the honor of winning and everyone who sends me a recipe will get credit on the blog (if you want it) and my heartfelt thanks.

Send your friends and their recipes over too.  I need all the help I can get!

    OK, here goes, my very simplest:

    Most of these are crockpot recipes (simple and crockpot seem to go together!)

    – chicken pieces and italian dressing
    or salsa, or teriyaki sauce, or… To make them crispy before eating, transfer onto a cookie sheet and broil for a couple of minutes in the oven.
    – fried fish! Here’s the tip for a great batter: dry off fish pieces. Have three bowls, one with flour, one with an egg beaten with a couple tablespoons water, and one with Panko bread crumbs mixed with spices (salt and lemon pepper is a good blend). Put fish into flour, then egg, then panko, then pan.
    – parmesan chicken in oven: mix the canned Parmesan cheese (powdery stuff) with some salt and pepper, dip chicken in, put chicken on cookie sheet, put rest of cheese mix on chicken, and bake in oven.

    veggie dishes:
    – grilled portobello mushrooms! By themselves can even make a good burger. No need to slice!
    – Green Giant microwaveable veggie mixes. They’re actually pretty good.
