Cock-a-Leekie Soup

I know I’m not the only one who loves it, in part at least, for the name.  Yes, I have the sense of humour of a 10 year old boy.  To be fair, though, it is also so darn easy to make and has such delicious results!  No pictures right away.  My computer has kind of cacked and I’m not sure how we are going to proceed with that one.

Cock-A-Leekie Soup
  • 9 chicken thighs, boneless, skinless
  • 2 tablespoons butter
  • 3 leeks, finely chopped
  • 10 cups unsalted chicken stock
  • ¾ c. rice
  • 1 lemon peel, peeled into long strips to remove later
  • 1 bay leaf
  • 1 tablespoon salt
  • ½ teaspoon pepper
1.In 7 quart soup pot, saute chicken in butter, remove, allow to cool, and dice
2.In butter remaining in soup pot cook leeks. It isn’t going to be a saute, the pot will be too crowded for that. It’s OK just go with that anyway
3.Stir the leeks to scrape up any BCBs off the pan (deglaze)
4.Return chicken to pot
5.Add chicken stock, rice, lemon peel and bay leaf; bring to boil. Reduce heat and simmer for about 20 minutes or until rice is tender.
6.Discard lemon peel and bay leaf. Season with salt and pepper. Ladle into warmed bowls; sprinkle with parsley.

    I love soup but never make it because PH isn’t a soup person. That makes me sad when I read recipes like this.
